Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cornmeal, poppy seeds, baking soda, and salt.
- In a stand mixer, cream together the butter, sugar, and zests until well combined.
- Add the oil, egg, and lemon juice to the mixture and mix until pale and evenly combined.
- Add the dry ingredients to the wet mixture and mix on low speed until just combined.
- Using a 1/4-cup cookie scoop, place the dough onto the prepared baking sheet, leaving space between each scoop.
- Sprinkle the tops with sugar and bake for 12 minutes.
- Let cool on the pan for 1 minute before transferring to a cooling rack.
