Ingredients

  • cups all-purpose flour
  • ¼ cup cornmeal
  • 2 tablespoons poppy seeds
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • teaspoons lemon zest
  • teaspoons orange zest
  • ¼ cup extra-virgin olive oil
  • 1 large egg
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cornmeal, poppy seeds, baking soda, and salt.
  3. In a stand mixer, cream together the butter, sugar, and zests until well combined.
  4. Add the oil, egg, and lemon juice to the mixture and mix until pale and evenly combined.
  5. Add the dry ingredients to the wet mixture and mix on low speed until just combined.
  6. Using a 1/4-cup cookie scoop, place the dough onto the prepared baking sheet, leaving space between each scoop.
  7. Sprinkle the tops with sugar and bake for 12 minutes.
  8. Let cool on the pan for 1 minute before transferring to a cooling rack.
