Ingredients

The dough

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 10 Tbsp unsalted butter
  • 1 cup granulated sugar
  • 2 Tbsp granulated sugar
  • 1 Tbsp lemon zest
  • 1 large egg
  • 1 large egg yolk
  • Tbsp fresh lemon juice
  • ¾ tsp lemon extract
  • ½ tsp vanilla extract
  • 5 drops yellow food coloring (optional)

For coating

  • ½ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In a mixer, whip together butter, sugar, and lemon zest until fluffy.
  4. Mix in the egg and egg yolk, then add lemon juice, lemon extract, vanilla extract, and optional food coloring.
  5. Gradually add the dry ingredients and mix until just combined.
  6. Scoop dough into balls, roll in powdered sugar to coat.
  7. Place on a baking sheet and bake for 10-13 minutes.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.
