Instructions
- Preheat the oven to 350°F.
- Whisk together flour, baking powder, and salt in a bowl.
- In a mixer, whip together butter, sugar, and lemon zest until fluffy.
- Mix in the egg and egg yolk, then add lemon juice, lemon extract, vanilla extract, and optional food coloring.
- Gradually add the dry ingredients and mix until just combined.
- Scoop dough into balls, roll in powdered sugar to coat.
- Place on a baking sheet and bake for 10-13 minutes.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
