Instructions
- Preheat the oven to 350°F.
- Whisk together the flour, cornstarch, baking powder, baking soda, and salt in a bowl.
- In a stand mixer, beat the butter, shortening, sugar, and lemon zest until fluffy.
- Add the egg and mix well.
- Incorporate honey, lemon extract, vanilla, lemon juice, and food coloring if using.
- Gradually add the dry ingredients and mix until combined.
- Scoop about 2 tablespoons of dough, roll in coarse sugar, and place on parchment-lined baking sheets.
- Flatten the dough slightly and bake for 10-12 minutes.
- Cool on the baking sheet for 1 minute before transferring to a wire rack.
