Ingredients

The dough

  • 1 cup gluten free baking flour
  • 2 tablespoons gluten free baking flour
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • ½ cup vegan butter
  • ½ cup sugar
  • 1 large egg or flax egg
  • 1 teaspoon vanilla extract
  • ¾ teaspoon baking powder
  • to taste sea salt flakes

For topping

  • to taste extra sugar
  • to taste extra lemon zest

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixer, beat together the sugar and vegan butter until well combined.
  3. Add the lemon juice, lemon zest, egg (or flax egg), and vanilla extract, and mix until incorporated.
  4. Gradually add the gluten free flour and baking powder, mixing until just combined.
  5. Refrigerate the dough for at least 30 minutes to prevent spreading.
  6. Form 12-14 balls of dough and place them on the prepared baking sheet.
  7. Sprinkle extra sugar on top of the dough balls.
  8. Bake for 10-11 minutes until soft, then let cool as they will firm up.
  9. Sprinkle with extra lemon zest and sea salt flakes before serving.
