Chewy Lemon Sugar Cookies

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a mixer, beat together the sugar and vegan butter until well combined.
- Add the lemon juice, lemon zest, egg (or flax egg), and vanilla extract, and mix until incorporated.
- Gradually add the gluten free flour and baking powder, mixing until just combined.
- Refrigerate the dough for at least 30 minutes to prevent spreading.
- Form 12-14 balls of dough and place them on the prepared baking sheet.
- Sprinkle extra sugar on top of the dough balls.
- Bake for 10-11 minutes until soft, then let cool as they will firm up.
- Sprinkle with extra lemon zest and sea salt flakes before serving.
