Instructions
- Combine flour, baking powder, and salt in a bowl.
- In a larger bowl, beat butter, brown sugar, and white sugar until light and puffy.
- Add egg, lemon zest, and vanilla while continuing to beat.
- Turn mixer to low speed and stir in the dry ingredients.
- Divide the dough in half and shape each portion into a disc, then wrap in plastic wrap and refrigerate for 1 hour.
- Make small balls with the dough and place them on a baking sheet, pressing them slightly.
- Bake in a preheated oven at 350°F for about 12 minutes or until the edges are lightly browned.
- Let the cookies cool on a rack for 1 minute.
