Ingredients

  • 2 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 large egg
  • 1 tbsp lemon zest
  • ½ tsp vanilla extract

Instructions

  1. Combine flour, baking powder, and salt in a bowl.
  2. In a larger bowl, beat butter, brown sugar, and white sugar until light and puffy.
  3. Add egg, lemon zest, and vanilla while continuing to beat.
  4. Turn mixer to low speed and stir in the dry ingredients.
  5. Divide the dough in half and shape each portion into a disc, then wrap in plastic wrap and refrigerate for 1 hour.
  6. Make small balls with the dough and place them on a baking sheet, pressing them slightly.
  7. Bake in a preheated oven at 350°F for about 12 minutes or until the edges are lightly browned.
  8. Let the cookies cool on a rack for 1 minute.
