Frosted Lemon Sugar Cookies

Ingredients

The cookies

  • 2 ½ cups cake flour
  • 2 tsp cornstarch
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup butter, at room temperature
  • ¼ cup vegetable shortening, unflavored, at room temperature
  • 1 cup granulated sugar
  • 1 Tbsp zest of 1 large lemon
  • 1 large egg
  • 1 large egg white
  • 1 tsp lemon extract
  • 1 tsp vanilla extract

The frosting

  • cup salted butter, at room temperature
  • 2 ½ cups powdered sugar
  • ½ tsp lemon extract
  • 2 ½ - 3 Tbsp fresh lemon juice
  • optional yellow food coloring or yellow sprinkles

Instructions

  1. Combine flour, cornstarch, baking powder, and salt in a bowl and set aside.
  2. In a mixer, whip together butter, shortening, sugar, and lemon zest until pale and fluffy.
  3. Add the egg, egg white, lemon extract, and vanilla extract, mixing until combined.
  4. Gradually add the dry ingredients and mix until just combined.
  5. Refrigerate the dough for 2 hours and preheat the oven during the last 10 minutes.
  6. Roll the dough into balls, flatten them, and place on a lined cookie sheet.
  7. Bake in a preheated oven for 9 to 11 minutes and let cool before frosting.
  8. For the frosting, mix all ingredients until smooth and fluffy, then frost the cooled cookies.
