The frosting

salted butter, at room temperature

powdered sugar

Instructions
- Combine flour, cornstarch, baking powder, and salt in a bowl and set aside.
- In a mixer, whip together butter, shortening, sugar, and lemon zest until pale and fluffy.
- Add the egg, egg white, lemon extract, and vanilla extract, mixing until combined.
- Gradually add the dry ingredients and mix until just combined.
- Refrigerate the dough for 2 hours and preheat the oven during the last 10 minutes.
- Roll the dough into balls, flatten them, and place on a lined cookie sheet.
- Bake in a preheated oven for 9 to 11 minutes and let cool before frosting.
- For the frosting, mix all ingredients until smooth and fluffy, then frost the cooled cookies.
