Ingredients

The cookies

  • 2 ¾ cups all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp cream of tartar
  • ½ tsp salt
  • 1 ½ cups granulated sugar
  • 3 Tbsp fresh lemon zest
  • 1 cup unsalted butter
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract

The frosting

  • ½ cup unsalted butter
  • 3 cups powdered sugar
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp heavy cream

Instructions

  1. Preheat the oven to 375 degrees F and line baking sheets.
  2. Whisk together the flour, baking soda, cream of tartar, and salt in a bowl.
  3. In an electric mixer, blend the sugar and lemon zest until fragrant.
  4. Add the butter and mix until combined, then mix in the egg, egg yolk, and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Scoop 1 ½ Tbsp of dough, shape into balls, and place on the baking sheet spaced 2 inches apart.
  7. Bake for 10-12 minutes until slightly under-baked, then cool on a wire rack.
  8. For the frosting, blend the butter until smooth, then add powdered sugar and lemon juice, mixing until fluffy.
  9. Frost the cooled cookies with the lemon frosting.
