Chewy Lemonade Sugar Cookies

The frosting

Instructions
- Preheat the oven to 375 degrees F and line baking sheets.
- Whisk together the flour, baking soda, cream of tartar, and salt in a bowl.
- In an electric mixer, blend the sugar and lemon zest until fragrant.
- Add the butter and mix until combined, then mix in the egg, egg yolk, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Scoop 1 ½ Tbsp of dough, shape into balls, and place on the baking sheet spaced 2 inches apart.
- Bake for 10-12 minutes until slightly under-baked, then cool on a wire rack.
- For the frosting, blend the butter until smooth, then add powdered sugar and lemon juice, mixing until fluffy.
- Frost the cooled cookies with the lemon frosting.
