  • ½ teaspoon vanilla extract
  • 2 ¾ cups + 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Prepare the lemon sugar by combining sugar and lemon zest in a bowl, rubbing them together until fragrant.
  2. Preheat the oven to 350°F and line baking sheets with parchment paper.
  3. In a mixer, cream together butter, sugar, and lemon zest until fluffy.
  4. Add the egg, lemon juice, and vanilla, mixing until lightened in color.
  5. Combine flour, baking soda, baking powder, and salt, mixing until just combined.
  6. Scoop cookie dough into balls, roll in lemon sugar, and place on prepared sheets.
  7. Bake for 9-11 minutes until slightly crackly on top, then cool on a rack.
