Lemon Drop Cookies

Ingredients

The cookie dough

  • 1 ¼ c. flour
  • ¼ tsp baking powder
  • tsp salt
  • ½ c. unsalted butter at room temperature
  • ¼ c. powdered sugar
  • 2 Tbsp granulated sugar
  • Zest of 1 large lemon
  • Juice of ½ lemon (about 2 Tbsp)

The glaze

  • ½ c. powdered sugar
  • Juice of about 1 lemon

Instructions

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, combine flour, baking powder, and salt; set aside.
  3. In a stand mixer, beat butter and powdered sugar until creamy. Mix in the lemon zest and juice until well combined.
  4. Gradually add the dry ingredients to the butter mixture and mix until combined. Chill the dough for about 30 minutes.
  5. Roll the dough into small balls, about a tablespoon each, and place on a lined baking sheet.
  6. Bake for 10-12 minutes until the bottoms are slightly browned. Let cool on the baking sheet before transferring to a cooling rack.
  7. For the glaze, whisk together powdered sugar and lemon juice until smooth.
  8. Dip the tops of the cookies in the glaze and let sit until the glaze hardens.
