Lemon Drop Cookies

The cookie dough

Zest of 1 large lemon

Juice of ½ lemon (about 2 Tbsp)
The glaze

powdered sugar

Juice of about 1 lemon
Instructions
- Preheat the oven to 375°F.
- In a mixing bowl, combine flour, baking powder, and salt; set aside.
- In a stand mixer, beat butter and powdered sugar until creamy. Mix in the lemon zest and juice until well combined.
- Gradually add the dry ingredients to the butter mixture and mix until combined. Chill the dough for about 30 minutes.
- Roll the dough into small balls, about a tablespoon each, and place on a lined baking sheet.
- Bake for 10-12 minutes until the bottoms are slightly browned. Let cool on the baking sheet before transferring to a cooling rack.
- For the glaze, whisk together powdered sugar and lemon juice until smooth.
- Dip the tops of the cookies in the glaze and let sit until the glaze hardens.
