The glaze

Instructions
- Preheat the oven to 350°F.
- Cream together the butter and sugar until fluffy; add the egg and vanilla and mix until combined.
- Add the flour, semolina, and salt to the wet ingredients and stir until just incorporated.
- For rustic cookies, roll the dough into logs, chill for 2 hours, then slice. For perfect edges, roll out and cut with a cookie cutter.
- Place cookies on a baking sheet and bake for 12 minutes until edges start to brown.
- Cool cookies on a wire rack.
- Make the glaze by sifting powdered sugar and whisking in lemon juice until smooth.
- Dip the tops of the cookies in the glaze and let excess drip off. Optionally, dip a second time for a sweeter taste.
