Luscious Lemon Cookies

Ingredients

The cookies

  • 1 ¼ cup all-purpose flour
  • ½ cup semolina
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • ½ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest

The glaze

  • 1 cup powdered sugar
  • 5 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. Cream together the butter and sugar until fluffy; add the egg and vanilla and mix until combined.
  3. Add the flour, semolina, and salt to the wet ingredients and stir until just incorporated.
  4. For rustic cookies, roll the dough into logs, chill for 2 hours, then slice. For perfect edges, roll out and cut with a cookie cutter.
  5. Place cookies on a baking sheet and bake for 12 minutes until edges start to brown.
  6. Cool cookies on a wire rack.
  7. Make the glaze by sifting powdered sugar and whisking in lemon juice until smooth.
  8. Dip the tops of the cookies in the glaze and let excess drip off. Optionally, dip a second time for a sweeter taste.
