Vegan Lemon Poppy Seed Bread

Instructions
- Make aquafaba by draining the liquid from one can of beans to measure ¾ cup and whip it with sugar until soft peaks form.
- Preheat the oven to 350°F.
- Add oil, lemon juice, and lemon zest to the aquafaba and gently fold in.
- Add whole wheat flour, all-purpose flour, baking powder, poppy seeds, and ground walnuts, and gently fold in.
- Spray a loaf pan with nonstick cooking spray and pour the batter into the pan, smoothing it with a spatula.
- Bake in the oven for about 50 minutes, or until a fork inserted in the center comes out clean.
- Let the bread cool slightly after removing it from the oven.
- If desired, whisk together powdered sugar, lemon juice, and lemon zest to make a glaze and drizzle it over the cooled bread.
- Slice the bread into 12 slices.
