Ingredients

The crust

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ cup butter

The filling

  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ½ cup lemon juice
  • 1 tsp baking powder
  • ¾ cup shredded coconut

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the flour and powdered sugar in a medium bowl and mix well.
  3. Blend in the butter until the mixture resembles small granules.
  4. Press the mixture into a lightly greased 9x13 inch glass casserole dish and bake for 15 minutes.
  5. While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, and baking powder until well combined.
  6. Once the crust is done, quickly re-whisk the filling and pour it over the crust.
  7. Sprinkle the shredded coconut on top and bake for an additional 20 minutes or until golden brown.
  8. Allow to cool for 10 minutes before slicing.
