Lemon Coconut Bars

The crust

The filling

Instructions
- Preheat the oven to 350°F.
- Combine the flour and powdered sugar in a medium bowl and mix well.
- Blend in the butter until the mixture resembles small granules.
- Press the mixture into a lightly greased 9x13 inch glass casserole dish and bake for 15 minutes.
- While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, and baking powder until well combined.
- Once the crust is done, quickly re-whisk the filling and pour it over the crust.
- Sprinkle the shredded coconut on top and bake for an additional 20 minutes or until golden brown.
- Allow to cool for 10 minutes before slicing.
