Ingredients

The salad

  • 2 pounds potatoes
  • 5 slices bacon
  • 3-4 pieces hard boiled eggs
  • 1 cup mayo
  • ½ cup chopped onions
  • ¼ cup pickle relish
  • 1 tablespoon yellow mustard
  • to taste salt
  • to taste pepper
  • 1 teaspoon paprika

Optional seasoning

  • 1 teaspoon fresh or dried chives
  • 1 teaspoon fresh or dried dill
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions

  1. Wash and peel the potatoes if desired, then cut them into equal-sized pieces.
  2. Place the potatoes in a pot, cover with water, and add salt.
  3. Bring to a boil, then reduce to a simmer and cook until fork-tender.
  4. Drain the potatoes and let them cool.
  5. In a bowl, combine the cooled potatoes with bacon, diced eggs, mayo, mustard, relish, onions, and spices.
  6. Stir to combine and adjust seasoning to taste.
  7. Cover and chill for at least 1-2 hours before serving.
