Instructions
- Wash and peel the potatoes if desired, then cut them into equal-sized pieces.
- Place the potatoes in a pot, cover with water, and add salt.
- Bring to a boil, then reduce to a simmer and cook until fork-tender.
- Drain the potatoes and let them cool.
- In a bowl, combine the cooled potatoes with bacon, diced eggs, mayo, mustard, relish, onions, and spices.
- Stir to combine and adjust seasoning to taste.
- Cover and chill for at least 1-2 hours before serving.
