Instructions
- Cut potatoes into even sizes, cover with water, add salt, and boil until tender.
- Hard boil the eggs using an Instant Pot or traditional method, then cool and peel.
- Cook the bacon in a skillet until crispy, then cool and crumble.
- Chop the cooled potatoes into small cubes and mash slightly for a creamier texture.
- Add chopped eggs, crumbled bacon, and chopped garlic, celery, green onions, cheese, and rosemary to the potatoes.
- Mix in mayonnaise and mustard, stirring until well combined.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate for better flavor.
