Ingredients

The salad

  • 5 lbs red potatoes
  • 12 pieces eggs
  • 1 package bacon
  • 6 cloves garlic
  • 1 bunch celery
  • 10 pieces green onions
  • 7 oz smoked cheddar cheese
  • 3 sprigs fresh rosemary

The dressing

  • cups mayonnaise
  • ½ cup yellow mustard
  • 1 tsp sea salt
  • 1 tsp ground pepper

Instructions

  1. Cut potatoes into even sizes, cover with water, add salt, and boil until tender.
  2. Hard boil the eggs using an Instant Pot or traditional method, then cool and peel.
  3. Cook the bacon in a skillet until crispy, then cool and crumble.
  4. Chop the cooled potatoes into small cubes and mash slightly for a creamier texture.
  5. Add chopped eggs, crumbled bacon, and chopped garlic, celery, green onions, cheese, and rosemary to the potatoes.
  6. Mix in mayonnaise and mustard, stirring until well combined.
  7. Season with salt and pepper to taste.
  8. Serve immediately or refrigerate for better flavor.
