Ranch Potato Salad

Ingredients

  • 1 ½ - 2 pounds red potatoes
  • salt to taste salt
  • 6 slices bacon, diced
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 teaspoons mustard
  • 1 packet ranch dressing mix
  • ½ - 1 cup cheddar cheese, shredded
  • 2 pieces green onions, thinly sliced
  • 1 teaspoon creole seasoning (salt-free)
  • pepper to taste pepper

Instructions

  1. Wash and cut the potatoes into uniform sizes, then add them to a medium saucepan with enough water to cover them and add salt.
  2. Cover and cook the potatoes until tender but firm, about 8-10 minutes, then drain and let them cool.
  3. In a large skillet, sauté chopped bacon over medium heat until brown and crisp, then drain on paper towels.
  4. In a medium bowl, mix together mayonnaise, sour cream, mustard, and ranch dressing until well combined.
  5. Once the potatoes are cool, combine them in a large bowl with shredded cheese, green onions, and creole seasoning.
  6. Add the mayonnaise mixture to the potatoes and mix carefully to coat, adjusting seasoning with salt and pepper as needed.
  7. Transfer to a serving bowl, top with bacon, extra cheese, and green onions if desired, and serve immediately or refrigerate until ready.
