Warm Potato Salad with Bacon

Ingredients

  • 1 ¼ pounds baby red potatoes
  • 4 slices bacon
  • 1 small red onion
  • ¼ cup apple cider vinegar
  • ¼ cup chicken or vegetable broth
  • 1 tablespoon honey or maple syrup
  • ¼ cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ cup chives

Instructions

  1. Wash the potatoes and place them in a medium pot covered with cold water by 2 inches.
  2. Bring the water to a boil and cook the potatoes until tender, about 10 to 12 minutes.
  3. While the potatoes are cooking, cook the bacon in a medium skillet over medium heat until crisp, then remove it from the skillet.
  4. Add the diced onion to the skillet and cook for about 6 minutes.
  5. Add the vinegar, broth, and honey to the skillet, bring to a boil, and cook for 1 minute.
  6. Stir in the mustard, olive oil, salt, and pepper, then remove from heat.
  7. Slice the cooked potatoes and place them in a bowl, then pour the dressing over and toss to coat.
  8. Add the bacon and chives, and toss again.
