Warm Potato Salad with Bacon

Instructions
- Wash the potatoes and place them in a medium pot covered with cold water by 2 inches.
- Bring the water to a boil and cook the potatoes until tender, about 10 to 12 minutes.
- While the potatoes are cooking, cook the bacon in a medium skillet over medium heat until crisp, then remove it from the skillet.
- Add the diced onion to the skillet and cook for about 6 minutes.
- Add the vinegar, broth, and honey to the skillet, bring to a boil, and cook for 1 minute.
- Stir in the mustard, olive oil, salt, and pepper, then remove from heat.
- Slice the cooked potatoes and place them in a bowl, then pour the dressing over and toss to coat.
- Add the bacon and chives, and toss again.
