Light and Easy Cauliflower Gratin

Ingredients

  • 1 medium head cauliflower, cut into small florets (about 5 cups)
  • ¼ cup half and half cream
  • ¼ tsp kosher salt
  • to taste fresh cracked black pepper
  • pinch nutmeg
  • 2 oz shredded light Havarti
  • 1 tbsp bread crumbs
  • baking spray

Instructions

  1. Preheat the oven to 350°F.
  2. Place cauliflower florets in a 9 x 9 baking dish.
  3. Whisk together half & half, salt, black pepper, and nutmeg, then pour over the cauliflower.
  4. Cover the dish with aluminum foil and bake until the cauliflower is tender, about 40 minutes.
  5. Remove the foil, sprinkle with shredded Havarti cheese and breadcrumbs, and lightly spray with oil.
  6. Bake for an additional 3 to 5 minutes, or broil for a minute for a browned top.
