Easy Cauliflower Gratin

Ingredients

  • 1 large head cauliflower
  • 2 tablespoons butter
  • 2 cloves garlic (minced)
  • 2 tablespoons whole-wheat flour
  • 1 ½ cups milk
  • 1 ½ cups cheddar cheese (grated)
  • ¾ teaspoon salt
  • to taste pepper
  • ¼ cup whole-wheat breadcrumbs (optional)

Instructions

  1. Preheat the oven to 450°F.
  2. Steam the cauliflower in a pot with a mesh steamer basket for 5 to 10 minutes until tender.
  3. Spread the steamed cauliflower in an even layer in a baking dish.
  4. In a saucepan, melt the butter and sauté the garlic for a minute.
  5. Whisk in the flour and cook until it darkens slightly.
  6. Add the milk and cook until it thickens, stirring occasionally.
  7. Remove from heat and stir in the cheese and spices.
  8. Pour the cheese mixture over the cauliflower and sprinkle with breadcrumbs.
  9. Bake for 25 to 30 minutes until golden brown and bubbly.
  10. Serve warm.
