Ingredients

The main ingredients

  • 1 large head cauliflower
  • 2 tablespoons butter
  • 1 tablespoon minced fresh thyme

  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese

  • 1 pinch ground nutmeg

  • 1 shallot finely chopped

Instructions

  1. Preheat the oven to 450°F and coat a casserole dish with nonstick spray.
  2. Boil water with salt, add cauliflower, and cook until tender for 3 to 4 minutes, then drain and rinse with cold water.
  3. Melt butter in a skillet, add shallots, and cook until softened, then add garlic and thyme.
  4. Stir in flour and cook until lightly browned, then whisk in cream, Parmesan, nutmeg, salt, and pepper, and simmer until thickened.
  5. Combine the cauliflower with the cheese sauce, pour into the baking dish, and top with breadcrumbs.
  6. Bake until hot and bubbly for about 12 to 15 minutes, then serve immediately.
