Instructions
- Preheat the oven to 450°F and coat a casserole dish with nonstick spray.
- Boil water with salt, add cauliflower, and cook until tender for 3 to 4 minutes, then drain and rinse with cold water.
- Melt butter in a skillet, add shallots, and cook until softened, then add garlic and thyme.
- Stir in flour and cook until lightly browned, then whisk in cream, Parmesan, nutmeg, salt, and pepper, and simmer until thickened.
- Combine the cauliflower with the cheese sauce, pour into the baking dish, and top with breadcrumbs.
- Bake until hot and bubbly for about 12 to 15 minutes, then serve immediately.
