Bacon Cauliflower Au Gratin

Instructions
- Preheat the oven to 400°F.
- Cook the bacon in a skillet over medium-high heat until crispy, about 3-4 minutes, then set aside on paper towels.
- Boil water in a large pot and cook the cauliflower florets for 4-5 minutes until just tender.
- Drain the cauliflower and place it in a 13x9 inch baking dish.
- In a saucepan, melt the butter over medium-high heat, then whisk in the flour for about 3 minutes.
- Slowly add the milk while whisking, bring to a boil, then reduce to a simmer for 6-8 minutes until thickened.
- Remove from heat and stir in the shredded cheese, thyme, salt, and pepper until smooth.
- Pour the cheese sauce over the cauliflower and mix gently.
- Top with bacon, additional thyme, and extra cheese.
- Bake for 20 minutes until slightly browned, then serve.
