Bacon Cauliflower Au Gratin

Ingredients

  • 4 strips bacon, diced
  • 2 heads cauliflower, cut into florets
  • 2 tablespoons unsalted butter
  • 2 ½ tablespoons flour
  • 1 ½ cups 2% milk
  • 1 ¼ cups Tillamook Sharp White Cheddar Cheese, shredded
  • 1 tablespoon fresh thyme (plus more for garnish)
  • to taste salt & pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Cook the bacon in a skillet over medium-high heat until crispy, about 3-4 minutes, then set aside on paper towels.
  3. Boil water in a large pot and cook the cauliflower florets for 4-5 minutes until just tender.
  4. Drain the cauliflower and place it in a 13x9 inch baking dish.
  5. In a saucepan, melt the butter over medium-high heat, then whisk in the flour for about 3 minutes.
  6. Slowly add the milk while whisking, bring to a boil, then reduce to a simmer for 6-8 minutes until thickened.
  7. Remove from heat and stir in the shredded cheese, thyme, salt, and pepper until smooth.
  8. Pour the cheese sauce over the cauliflower and mix gently.
  9. Top with bacon, additional thyme, and extra cheese.
  10. Bake for 20 minutes until slightly browned, then serve.
