Cauliflower Au Gratin

Ingredients

  • 8 cups cauliflower florets
  • 1 small onion, chopped
  • 6 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded cheese
  • ¼ cup parmesan, freshly grated
  • ¼ cup breadcrumbs

Instructions

  1. Preheat the oven to 375º F and grease a baking dish.
  2. Roast the cauliflower on a baking sheet for 20 minutes.
  3. In a saucepan, heat 4 tablespoons of butter and sauté the onion until softened.
  4. Add flour to the saucepan and cook until it starts to brown.
  5. Gradually whisk in the hot milk to create a smooth sauce and season with salt and pepper.
  6. Stir in half of the shredded cheese until melted.
  7. Place the roasted cauliflower in the baking dish and pour the cheese sauce over it.
  8. Top with the remaining cheese and parmesan.
  9. Melt the remaining butter and mix with breadcrumbs, then sprinkle over the dish.
  10. Bake for about 20 minutes until the cheese is melted and browned, then return to the oven for an additional 5-10 minutes until bubbly.
