Cauliflower Au Gratin

Instructions
- Preheat the oven to 375º F and grease a baking dish.
- Roast the cauliflower on a baking sheet for 20 minutes.
- In a saucepan, heat 4 tablespoons of butter and sauté the onion until softened.
- Add flour to the saucepan and cook until it starts to brown.
- Gradually whisk in the hot milk to create a smooth sauce and season with salt and pepper.
- Stir in half of the shredded cheese until melted.
- Place the roasted cauliflower in the baking dish and pour the cheese sauce over it.
- Top with the remaining cheese and parmesan.
- Melt the remaining butter and mix with breadcrumbs, then sprinkle over the dish.
- Bake for about 20 minutes until the cheese is melted and browned, then return to the oven for an additional 5-10 minutes until bubbly.
