Ingredients

The marinade

  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons rice vinegar
  • ΒΌ teaspoon ground ginger

The bowl components

  • 2 cups cubed seedless watermelon
  • 1 scallion chopped (both white and green parts)
  • 1 cup cooked rice
  • 1 cup steamed shelled edamame
  • 1 sheet nori (torn into pieces)
  • 1 medium avocado (peeled, pitted, and sliced)

Instructions

  1. Whisk together the soy sauce, sesame oil, rice vinegar, and ginger in a medium bowl.
  2. Add the watermelon and scallion to the marinade and let it marinate for at least 30 minutes, or overnight in the refrigerator for better flavor.
  3. Divide the cooked rice into two bowls.
  4. Top the rice with the steamed edamame, nori, and sliced avocado.
  5. Add the marinated watermelon on top of each bowl.
  6. Drizzle with any remaining marinade if desired and serve.
