Watermelon Poke Bowls

Instructions
- Whisk together the soy sauce, sesame oil, rice vinegar, and ginger in a medium bowl.
- Add the watermelon and scallion to the marinade and let it marinate for at least 30 minutes, or overnight in the refrigerator for better flavor.
- Divide the cooked rice into two bowls.
- Top the rice with the steamed edamame, nori, and sliced avocado.
- Add the marinated watermelon on top of each bowl.
- Drizzle with any remaining marinade if desired and serve.
