Santa's Whiskers Cookies

The dough

finely chopped maraschino cherries
For rolling

sweetened shredded coconut

white chocolate baking bar

Instructions
- Beat the butter and sugar together until creamy, then mix in the egg and extracts.
- Gradually add the flour and salt, mixing until combined, then fold in the cherries.
- Divide the dough in half and shape into two logs, rolling them in shredded coconut.
- Chill the logs in plastic wrap for at least 3 hours or up to 5 days.
- Preheat the oven and prepare baking sheets.
- Slice the chilled logs into cookies and place them on the baking sheets.
- Bake until golden around the edges, then cool on a wire rack.
- Optional: Drizzle with melted white chocolate and sprinkle with coconut.
