Ingredients

The dough

  • ¾ cup unsalted butter, softened to room temperature
  • cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon almond extract
  • 2 cups all-purpose flour (spooned & leveled)
  • ¼ teaspoon salt
  • ¾ cup finely chopped maraschino cherries

For rolling

  • 1 cup sweetened shredded coconut

Optional toppings

  • 1 4-ounce white chocolate baking bar
  • extra coconut for topping

Instructions

  1. Beat the butter and sugar together until creamy, then mix in the egg and extracts.
  2. Gradually add the flour and salt, mixing until combined, then fold in the cherries.
  3. Divide the dough in half and shape into two logs, rolling them in shredded coconut.
  4. Chill the logs in plastic wrap for at least 3 hours or up to 5 days.
  5. Preheat the oven and prepare baking sheets.
  6. Slice the chilled logs into cookies and place them on the baking sheets.
  7. Bake until golden around the edges, then cool on a wire rack.
  8. Optional: Drizzle with melted white chocolate and sprinkle with coconut.
