For the sandwich

Instructions
- 1. Steam the eggs for 10 minutes using a pot with a steamer basket.
- 2. Transfer the eggs to an ice bath to cool.
- 3. Dice the celery and slice the scallions.
- 4. In a bowl, combine mayonnaise, diced celery, sliced scallions, and pickle juice.
- 5. Peel and chop the eggs, then add them to the bowl and mix.
- 6. Season with salt and pepper to taste.
- 7. Prepare the bread and spread the egg salad on half of the slices.
- 8. Top with sprouts or lettuce, then close the sandwiches and cut in half.
