Egg Salad Sandwich

Ingredients

For the egg salad

  • 6 eggs eggs
  • ¼ cup mayonnaise
  • cup diced celery
  • 6 scallions scallions
  • 2-3 tablespoons pickle juice
  • to taste sea salt
  • to taste fresh cracked black pepper

For the sandwich

  • 4 slices bread
  • a few handfuls sprouts or tender lettuce

Instructions

  1. 1. Steam the eggs for 10 minutes using a pot with a steamer basket.
  2. 2. Transfer the eggs to an ice bath to cool.
  3. 3. Dice the celery and slice the scallions.
  4. 4. In a bowl, combine mayonnaise, diced celery, sliced scallions, and pickle juice.
  5. 5. Peel and chop the eggs, then add them to the bowl and mix.
  6. 6. Season with salt and pepper to taste.
  7. 7. Prepare the bread and spread the egg salad on half of the slices.
  8. 8. Top with sprouts or lettuce, then close the sandwiches and cut in half.
