Ingredients

For the Egg Salad

  • 6 eggs hard cooked
  • ¾ cup diced celery
  • ¼ cup plain non-fat Greek yogurt
  • 1 teaspoon Dijon mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon chopped fresh dill

For Serving

  • 4 slices whole grain bread
  • to taste arugula
  • to taste tomato
  • to taste additional chopped fresh dill

Instructions

  1. Peel the eggs and cut them into a rough dice.
  2. Combine the diced eggs with celery, Greek yogurt, mustard, salt, pepper, and dill in a mixing bowl.
  3. Stir the mixture to combine all ingredients well.
  4. Serve the egg salad on toasted bread with tomatoes and arugula, or enjoy atop greens.
