Ingredients

The salad

  • ½ cup mayonnaise
  • 1 rib celery, finely chopped
  • 3 tablespoons onion, minced
  • 2 tablespoons fresh parsley, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 12 pieces hard-boiled eggs, peeled and coarsely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For serving

  • as needed bread or crackers or lettuce leaves

Instructions

  1. In a large bowl, combine mayonnaise, celery, onion, parsley, mustard, and lemon juice.
  2. Stir the mixture to combine well.
  3. Gently fold in the chopped hard-boiled eggs.
  4. Season with additional salt and pepper to taste.
  5. Serve on bread, toast, lettuce, or with crackers.
