Best Egg Salad

Ingredients

  • 6 large eggs
  • ¼ cup mayonnaise
  • 2 to 3 teaspoons Dijon mustard
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon sea salt
  • to taste freshly ground black pepper
  • ¼ cup finely diced red onion
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon capers

Instructions

  1. Hard boil the eggs and then peel and chop them.
  2. In a medium bowl, whisk together the mayonnaise, mustard, lemon juice, salt, and pepper.
  3. Mix in the diced red onion, then fold in the chopped eggs, chives, dill, and capers if using.
  4. Cover and chill in the refrigerator for 20 minutes.
  5. Stir, then season to taste and serve.
