Easy Egg Salad

Instructions
- If you don't have hard boiled eggs on hand, boil them and place in an ice water bath for 10 minutes before peeling and chopping.
- In a medium to large bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until smooth.
- Gently fold in the diced eggs, celery, onions, and chives.
- Season with salt and pepper to taste.
- Garnish with paprika and more chives on top if desired.
