Classic Egg Salad

Ingredients

  • 8 eggs hardboiled eggs
  • 2 tablespoons finely diced red onion
  • 2 tablespoons finely diced celery
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh chopped dill
  • to taste salt
  • to taste pepper
  • 2 tablespoons finely diced radish (optional)

Instructions

  1. Boil the eggs in a pot with water covering them by one inch.
  2. Once boiling, turn off the heat, cover, and let sit for 10 minutes.
  3. Prepare an ice bath in a large bowl with ice and cold water.
  4. Transfer the eggs to the ice bath after 10 minutes to cool, then peel them.
  5. Chop four of the eggs and the remaining four eggs with yolks.
  6. In a large bowl, combine the chopped eggs, onion, celery, radish, mayonnaise, dill, salt, and pepper.
  7. Gently mix everything together.
  8. Serve in a lettuce cup, on bread, or over a salad.
