Easy Egg Salad Dip

Ingredients

  • 4 eggs hard boiled eggs
  • ¼ cup mayonnaise
  • ½ tbsp dijon mustard
  • 1 tbsp minced fresh dill
  • 2 green onions chopped
  • 1 tbsp capers
  • ¼ cup diced red onion
  • 2 tbsp diced dill pickles
  • 1 tsp salt
  • ¼ tsp pepper

Instructions

  1. Boil water in a medium pot and reduce to a light boil.
  2. Gently lower the eggs into the pot and set a timer for 8-12 minutes based on desired doneness.
  3. Prepare an ice water bath while the eggs are boiling.
  4. Once the timer goes off, transfer the eggs to the ice bath for 5-10 minutes.
  5. Peel and slice the eggs as desired.
  6. In a mixing bowl, combine the chopped eggs with mayo, mustard, dill, green onions, capers, red onion, pickles, salt, and pepper.
  7. Stir until well combined and serve as desired.
