Instructions
- Toast the slice of bread.
- Chop the egg, pickle, and most of the green onion, placing them in a bowl.
- Add light mayonnaise and yellow mustard (or pickle juice) to the bowl and stir gently to combine.
- Season the mixture with salt and pepper to taste.
- Remove the toast and line it with greens.
- Top the toast with the egg salad mixture.
- Thinly slice the remaining green onion and sprinkle it on top of the sandwich.
- Add additional salt and pepper if desired, and serve immediately.
