Ingredients

  • 1 slice whole grain bread
  • 1 large hard-boiled egg
  • 1 tablespoon light mayonnaise
  • 1/8-1/4 teaspoon yellow mustard or pickle juice
  • 1 high-quality pickle spear
  • 1 stalk green onion
  • to taste greens (like spinach)

Instructions

  1. Toast the slice of bread.
  2. Chop the egg, pickle, and most of the green onion, placing them in a bowl.
  3. Add light mayonnaise and yellow mustard (or pickle juice) to the bowl and stir gently to combine.
  4. Season the mixture with salt and pepper to taste.
  5. Remove the toast and line it with greens.
  6. Top the toast with the egg salad mixture.
  7. Thinly slice the remaining green onion and sprinkle it on top of the sandwich.
  8. Add additional salt and pepper if desired, and serve immediately.
