The marinara sauce

extra virgin olive oil

crushed Roma tomatoes

Instructions
- Heat olive oil in a skillet and sauté garlic until golden.
- Add crushed tomatoes and basil, simmer for about 15 minutes.
- Preheat oven to 350°F and cook manicotti noodles until al dente, then drain.
- In a bowl, mix ricotta, eggs, parsley, salt, and pepper, then stir in mozzarella and parmesan.
- Stuff the manicotti shells with the cheese mixture.
- Spread marinara sauce in the bottom of baking dishes and arrange stuffed manicotti on top.
- Pour remaining marinara sauce over the manicotti and cover with foil.
- Bake for 35 to 40 minutes until cooked through and cheese is melted.
