Chicken Spinach Manicotti

Ingredients

The pasta

  • 8 ounces dried manicotti

The filling

  • 15 ounces ricotta cheese
  • 1 ½ cups cooked diced chicken
  • 8 ounces frozen spinach, thawed and drained
  • 8 ounces shredded mozzarella cheese
  • 4 ounces shredded parmesan cheese
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground black pepper

The sauce

  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 350°F and coat a 9 x 13-inch casserole dish with cooking spray.
  2. Cook the manicotti in salted water according to package directions without stirring, then drain.
  3. In a large bowl, combine the ricotta, chicken, spinach, 1 cup of mozzarella, parmesan, salt, and pepper.
  4. Spread ½ cup of marinara sauce on the bottom of the prepared casserole dish.
  5. Stuff each manicotti with the ricotta mixture and arrange them in a single layer in the dish.
  6. Top with the remaining 1 ½ cups marinara sauce and remaining mozzarella cheese.
  7. Bake for 30 to 35 minutes until the cheese is melted and bubbly.
  8. Let cool for 10 minutes, garnish with fresh herbs, and serve warm.
