Homemade Spinach Manicotti

jarred marinara or homemade marinara sauce
Instructions
- Make the crespelles as per the recipe link.
- Preheat the oven to 375°F.
- In a large bowl, mix ricotta, 1½ cups of mozzarella, egg, spinach, Parmesan, salt, and pepper.
- Fill each crespelle with ¼ cup of the spinach filling and roll them up.
- In a baking dish, pour 1 cup of sauce on the bottom.
- Place the rolled manicotti seam side down in the dish.
- Top with 1½ cups of sauce and the remaining mozzarella cheese.
- Cover with foil and bake for about 25 minutes until hot and bubbling.
