Instructions
- Make the crepes in about 20 minutes, which can be prepared in advance.
- Blend the marinara sauce and water until smooth, then butter a baking dish and pour in about ⅓ of the sauce.
- Cut the crepes to have two curved sides and two straight sides.
- Combine all filling ingredients in a bowl, adjust seasoning, and score the mixture into 8 wedges.
- Fill each crepe with the filling, roll them up, and place seam-side down in the baking dish.
- Pour the remaining marinara sauce over the crepes and top with mozzarella cheese.
- Cover and microwave for about 5 minutes, then broil to brown the cheese if desired.
