Ingredients

Crepes

  • 8 pieces Low Carb No-fail Crepes

Filling

  • 8 ounces frozen spinach
  • 1 ¼ cups low fat ricotta cheese
  • 8 ounces 5 cheese Italian blend
  • 1 large egg
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 1 pinch fresh nutmeg

Sauce and Toppings

  • 1 ¼ cups Rao's Marinara Sauce
  • ¼ cup water
  • ½ cup mozzarella cheese
  • to taste garnish chopped parsley or basil

Instructions

  1. Make the crepes in about 20 minutes, which can be prepared in advance.
  2. Blend the marinara sauce and water until smooth, then butter a baking dish and pour in about ⅓ of the sauce.
  3. Cut the crepes to have two curved sides and two straight sides.
  4. Combine all filling ingredients in a bowl, adjust seasoning, and score the mixture into 8 wedges.
  5. Fill each crepe with the filling, roll them up, and place seam-side down in the baking dish.
  6. Pour the remaining marinara sauce over the crepes and top with mozzarella cheese.
  7. Cover and microwave for about 5 minutes, then broil to brown the cheese if desired.
