Instructions
- Make the crepes, which take about 20 minutes and can be made in advance.
- Prepare the marinara sauce by blending it with water until smooth.
- Butter a baking dish and pour about ⅓ of the sauce into the bottom.
- Trim the crepes to create straight edges.
- Mix all filling ingredients in a bowl and adjust seasonings to taste.
- Fill each crepe with the filling and roll them up, placing seam-side down in the baking dish.
- Pour the remaining marinara sauce over the crepes and top with mozzarella cheese.
- Cover and microwave for about 5 minutes or until heated through, then broil to brown the cheese if desired.
