Ingredients

Crepes

  • 8 crepes Low Carb No-fail Crepes

Filling

  • 8 ounces frozen spinach, thawed and squeezed dry
  • 1 ¼ cups low fat ricotta cheese
  • 8 ounces 5 cheese Italian blend or mozzarella
  • 1 large egg
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 1 pinch fresh nutmeg

Sauce and Topping

  • 1 ¼ cups Rao's Marinara Sauce
  • ¼ cup water
  • ½ cup mozzarella cheese
  • to taste chopped parsley or basil for garnish

Instructions

  1. Make the crepes, which take about 20 minutes and can be made in advance.
  2. Prepare the marinara sauce by blending it with water until smooth.
  3. Butter a baking dish and pour about ⅓ of the sauce into the bottom.
  4. Trim the crepes to create straight edges.
  5. Mix all filling ingredients in a bowl and adjust seasonings to taste.
  6. Fill each crepe with the filling and roll them up, placing seam-side down in the baking dish.
  7. Pour the remaining marinara sauce over the crepes and top with mozzarella cheese.
  8. Cover and microwave for about 5 minutes or until heated through, then broil to brown the cheese if desired.
