Ingredients

The pasta

  • 24 pieces manicotti shells

The cheese filling

  • 24 ounces ricotta cheese
  • cups shredded mozzarella cheese
  • ½ cup grated Romano or parmesan cheese
  • 2 large eggs

The seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon fresh parsley, finely chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper

The sauce

  • 24 ounces marinara sauce
  • 1 cup shredded mozzarella cheese (for topping)
  • 1 tablespoon Italian parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Add ½ cup of marinara sauce to the bottom of a baking dish.
  3. Boil a large pot of salted water and cook the manicotti shells until just softened, then drain.
  4. In a large bowl, mix ricotta, mozzarella, Romano, eggs, and all seasonings until well combined.
  5. Fill the manicotti shells with the cheese mixture and place them in the baking dish.
  6. Top the filled shells with the remaining marinara sauce and sprinkle with mozzarella cheese and parsley.
  7. Cover the dish with aluminum foil and bake for 40-45 minutes.
  8. Remove the foil and bake for an additional 5-8 minutes until the cheese is melted.
  9. Let sit for 5 minutes before serving.
