Instructions
- Preheat the oven to 350°F and coat a baking dish with cooking spray.
- In a large pan, heat olive oil over medium heat and brown the sausage, breaking it into small pieces.
- Add chopped onions and cook until softened, then add garlic and cook for an additional 30 seconds.
- In a bowl, combine ricotta, egg, mozzarella, parmesan, Italian seasoning, salt, and pepper.
- Mix the sausage into the cheese mixture until well combined.
- Cook manicotti shells in boiling water for 1-2 minutes less than package directions, then drain.
- Spread 1 cup of marinara sauce in the bottom of the baking dish.
- Fill each manicotti shell with the sausage and cheese mixture using a spoon or piping bag.
- Arrange filled shells in the baking dish and pour remaining marinara sauce over the top.
- Cover and bake for 20 minutes, then uncover, sprinkle mozzarella cheese on top, and bake for an additional 10-15 minutes until cheese is melted and browned.
- Sprinkle with parsley before serving.
