Ingredients

Filling

  • 2 teaspoons olive oil
  • 1 pound Italian sausage
  • ½ cup onion
  • 2 teaspoons minced garlic
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1 cup mozzarella cheese
  • ½ cup parmesan cheese
  • ¾ teaspoon dried Italian seasoning
  • to taste salt
  • to taste pepper

Assembly

  • cups marinara sauce
  • 12 pieces manicotti shells
  • cups mozzarella cheese
  • 2 tablespoons chopped parsley
  • as needed cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a baking dish with cooking spray.
  2. In a large pan, heat olive oil over medium heat and brown the sausage, breaking it into small pieces.
  3. Add chopped onions and cook until softened, then add garlic and cook for an additional 30 seconds.
  4. In a bowl, combine ricotta, egg, mozzarella, parmesan, Italian seasoning, salt, and pepper.
  5. Mix the sausage into the cheese mixture until well combined.
  6. Cook manicotti shells in boiling water for 1-2 minutes less than package directions, then drain.
  7. Spread 1 cup of marinara sauce in the bottom of the baking dish.
  8. Fill each manicotti shell with the sausage and cheese mixture using a spoon or piping bag.
  9. Arrange filled shells in the baking dish and pour remaining marinara sauce over the top.
  10. Cover and bake for 20 minutes, then uncover, sprinkle mozzarella cheese on top, and bake for an additional 10-15 minutes until cheese is melted and browned.
  11. Sprinkle with parsley before serving.
