Paleo Cornbread
Ingredients
The batter

blanched almond flour

paleo baking powder

raw local honey

grass-fed butter or ghee, melted (or coconut oil for dairy-free)

Optional ingredient

yellow corn kernels
Instructions
- 1. Preheat the oven to 375°F and grease an 8" cast iron skillet or an 8x8" square baking dish.
- 2. In a large mixing bowl, combine all ingredients except for the corn.
- 3. If using corn, fold it into the mixture.
- 4. Transfer the batter to the greased skillet or dish, smoothing the top.
- 5. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- 6. Allow to cool before serving, optionally with grass-fed butter or ghee and honey.
