Keto Chicken Florentine

fresh spinach, packed (2 oz/56 g)
Instructions
- 1. Let the chicken come to room temperature for 20 minutes and pound it to an even thickness.
- 2. Season the chicken with salt and pepper, then rub with olive oil.
- 3. Heat a skillet over medium-high heat, add oil, and cook the chicken for 6-8 minutes per side until cooked through.
- 4. Remove the chicken and keep it warm.
- 5. In the same pan, add mushrooms and garlic, cooking until softened.
- 6. Pour in the wine and stir, then add the spinach and stir until wilted.
- 7. Push the vegetables to the sides of the pan, add cream cheese and heavy cream to the center, and stir until melted and thick.
- 8. Season the sauce with salt and pepper, then serve over the chicken.
