Ingredients

The chicken

  • 2 pieces boneless skinless chicken breasts (6 oz/170 g each)
  • 1 ½ tablespoons olive oil, divided
  • 1 teaspoon minced garlic

The sauce

  • ¼ cup dry white wine (2 fl oz/60 ml)
  • ½ cup heavy cream (4 fl oz/120 ml)
  • ¼ cup soft cream cheese (2 oz/56 g)

The vegetables

  • ¼ pound sliced mushrooms (4 oz/120 g)
  • 1 cup fresh spinach, packed (2 oz/56 g)

Instructions

  1. 1. Let the chicken come to room temperature for 20 minutes and pound it to an even thickness.
  2. 2. Season the chicken with salt and pepper, then rub with olive oil.
  3. 3. Heat a skillet over medium-high heat, add oil, and cook the chicken for 6-8 minutes per side until cooked through.
  4. 4. Remove the chicken and keep it warm.
  5. 5. In the same pan, add mushrooms and garlic, cooking until softened.
  6. 6. Pour in the wine and stir, then add the spinach and stir until wilted.
  7. 7. Push the vegetables to the sides of the pan, add cream cheese and heavy cream to the center, and stir until melted and thick.
  8. 8. Season the sauce with salt and pepper, then serve over the chicken.
