Ingredients

The chicken

  • 2 pieces boneless skinless chicken breasts (6 oz each)

The sauce

  • ¼ cup dry white wine
  • ½ cup heavy cream
  • ¼ cup soft cream cheese
  • 1 ½ tablespoon olive oil
  • 1 teaspoon minced garlic
  • ¼ pound sliced mushrooms
  • 1 cup fresh spinach

Instructions

  1. Let the chicken come to room temperature and pound it to an even thickness.
  2. Season the chicken with salt and pepper and rub with olive oil.
  3. Cook the chicken in a skillet over medium heat for 6-8 minutes per side until cooked through.
  4. Remove the chicken from the skillet and keep warm.
  5. In the same skillet, add more olive oil if necessary and sauté the mushrooms and garlic.
  6. Pour in the white wine and stir, then add the spinach to wilt.
  7. Push the vegetables to the sides of the pan and add the cream cheese and heavy cream to the center.
  8. Stir until the cream cheese melts and the sauce thickens, then season to taste.
  9. Serve the sauce over the chicken.
