Instructions
- Let the chicken come to room temperature and pound it to an even thickness.
- Season the chicken with salt and pepper and rub with olive oil.
- Cook the chicken in a skillet over medium heat for 6-8 minutes per side until cooked through.
- Remove the chicken from the skillet and keep warm.
- In the same skillet, add more olive oil if necessary and sauté the mushrooms and garlic.
- Pour in the white wine and stir, then add the spinach to wilt.
- Push the vegetables to the sides of the pan and add the cream cheese and heavy cream to the center.
- Stir until the cream cheese melts and the sauce thickens, then season to taste.
- Serve the sauce over the chicken.
