Ingredients

The Chicken

  • 2 large chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup almond flour or all-purpose flour
  • 2 tablespoons parmesan cheese
  • 1 tablespoon olive oil
  • 1 tablespoon butter

The Florentine Sauce

  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • ¾ cup chicken broth
  • 1 tablespoon Italian seasoning
  • 1 cup heavy cream
  • ¼ cup parmesan cheese
  • 2 cups baby spinach, loosely packed

Instructions

  1. Slice the chicken breasts lengthways to form four thin pieces and season with salt and pepper.
  2. Dip each chicken fillet in a mixture of almond flour and parmesan cheese.
  3. Heat olive oil and one tablespoon of butter in a skillet over medium heat, then add the chicken and cook until golden, about 8-10 minutes.
  4. Remove the chicken from the skillet and add the remaining butter and garlic, cooking for 30 seconds.
  5. Stir in chicken broth and Italian seasoning, simmering for 5-6 minutes until reduced.
  6. Add heavy cream, bring to a boil, then mix in parmesan cheese and spinach.
  7. Return the chicken to the pan and simmer until the sauce thickens, then serve.
