Creamy Chicken Florentine

The Florentine Sauce

baby spinach, loosely packed
Instructions
- Slice the chicken breasts lengthways to form four thin pieces and season with salt and pepper.
- Dip each chicken fillet in a mixture of almond flour and parmesan cheese.
- Heat olive oil and one tablespoon of butter in a skillet over medium heat, then add the chicken and cook until golden, about 8-10 minutes.
- Remove the chicken from the skillet and add the remaining butter and garlic, cooking for 30 seconds.
- Stir in chicken broth and Italian seasoning, simmering for 5-6 minutes until reduced.
- Add heavy cream, bring to a boil, then mix in parmesan cheese and spinach.
- Return the chicken to the pan and simmer until the sauce thickens, then serve.
