Ingredients

The filling

  • 2 tablespoons avocado oil
  • 2 large red onions
  • 1 teaspoon dried thyme
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground pepper
  • 1 teaspoon garlic
  • 1 tablespoon balsamic vinegar
  • 5 ounces baby spinach
  • 4 ounces goat cheese

The crust

  • 1 pound quinoa pizza dough

Instructions

  1. Preheat the oven to 425°F and spray a 12-cup muffin tin with cooking spray.
  2. Heat 1 tablespoon of avocado oil in a skillet over medium-high heat and add the sliced onions, cooking for about 8 minutes.
  3. Reduce the heat to medium, add thyme, salt, and pepper, and cook for an additional 10 to 15 minutes.
  4. Add garlic and balsamic vinegar to the onions, cooking for 30 seconds before removing from heat.
  5. In the same skillet, add another teaspoon of oil and cook the spinach until wilted, then press out excess moisture.
  6. Roll out the quinoa pizza dough on parchment paper into a 9 x 13 inch rectangle and brush with the remaining oil.
  7. Spread the caramelized onions and wilted spinach over the dough, then sprinkle with crumbled goat cheese.
  8. Carefully roll the dough into a log from the long side and cut into 12 slices.
  9. Place the slices in the prepared muffin tins and bake until golden brown, about 20 minutes.
  10. Let cool for 5 minutes before serving warm.
