Instructions
- Preheat the oven to 425°F and spray a 12-cup muffin tin with cooking spray.
- Heat 1 tablespoon of avocado oil in a skillet over medium-high heat and add the sliced onions, cooking for about 8 minutes.
- Reduce the heat to medium, add thyme, salt, and pepper, and cook for an additional 10 to 15 minutes.
- Add garlic and balsamic vinegar to the onions, cooking for 30 seconds before removing from heat.
- In the same skillet, add another teaspoon of oil and cook the spinach until wilted, then press out excess moisture.
- Roll out the quinoa pizza dough on parchment paper into a 9 x 13 inch rectangle and brush with the remaining oil.
- Spread the caramelized onions and wilted spinach over the dough, then sprinkle with crumbled goat cheese.
- Carefully roll the dough into a log from the long side and cut into 12 slices.
- Place the slices in the prepared muffin tins and bake until golden brown, about 20 minutes.
- Let cool for 5 minutes before serving warm.
