Peanut Butter Stuffed Chocolate Dates

Instructions
- Slice the dates three-quarters of the way through and remove the pits.
- Stuff each date with about one teaspoon of peanut butter and place on a parchment-lined freezer-safe plate.
- Freeze the stuffed dates while you melt the chocolate.
- Melt the chocolate using a double boiler or microwave.
- Remove the dates from the freezer and dip each one in the melted chocolate using a fork to coat evenly.
- Return the coated dates to the parchment-lined plate.
- If using, mix the ground freeze-dried raspberries and shredded coconut in a small bowl.
- While the chocolate is still melted, sprinkle the raspberry and coconut mixture on top of the dates.
- Chill the dates in the refrigerator for at least 2 hours before serving.
