Peanut Butter Stuffed Chocolate Dates

Ingredients

The dates

  • 12 pieces Medjool dates

The filling and coating

  • ¼ cup peanut butter
  • ½ cup chocolate chips

Optional toppings

  • ¼ cup freeze-dried raspberries
  • 1 tablespoon unsweetened shredded coconut

Instructions

  1. Slice the dates three-quarters of the way through and remove the pits.
  2. Stuff each date with about one teaspoon of peanut butter and place on a parchment-lined freezer-safe plate.
  3. Freeze the stuffed dates while you melt the chocolate.
  4. Melt the chocolate using a double boiler or microwave.
  5. Remove the dates from the freezer and dip each one in the melted chocolate using a fork to coat evenly.
  6. Return the coated dates to the parchment-lined plate.
  7. If using, mix the ground freeze-dried raspberries and shredded coconut in a small bowl.
  8. While the chocolate is still melted, sprinkle the raspberry and coconut mixture on top of the dates.
  9. Chill the dates in the refrigerator for at least 2 hours before serving.
