Stuffed Dates with Pistachios

Ingredients

The dates

  • 12 pieces medjool dates

The filling

  • ½ cup creme fraiche
  • ½ cup pistachios
  • a small handful fresh wild rose petals or pomegranate seeds
  • pinch salt
  • pinch pepper
  • light dusting ground cardamom

Optional garnish

  • to taste mint leaves
  • to taste lemon zest

Instructions

  1. Split the dates in half and remove the pits, placing them on a platter.
  2. Fill each date with creme fraiche using a spoon or pastry bag.
  3. Press pistachios into the filling of each date.
  4. Tuck rose petals or pomegranate seeds into the filling.
  5. Sprinkle with salt, pepper, and a light dusting of cardamom.
  6. Garnish with mint leaves and lemon zest if desired.
