Vegan Stuffed Dates

Ingredients

The filling

  • 12 pieces pitted medjool dates
  • 1 cup PB2 powdered peanut butter
  • ¼ cup dairy free milk
  • 3-4 tablespoons chopped pecans
  • 3-4 tablespoons maple syrup
  • 1 teaspoon vanilla extract

The toppings

  • ¼ cup chocolate chips
  • a little amount neutral oil (optional)
  • to taste amount sea salt (optional)

Instructions

  1. Open the dates to expose the center.
  2. Mix ¾ cup of the powdered peanut butter with the milk until smooth, then mix in the pecans.
  3. In a separate bowl, mix the remaining ¼ cup of powdered peanut butter with maple syrup and vanilla until smooth.
  4. Stuff about one teaspoon of the peanut butter mixture into each date and close them.
  5. Melt the chocolate chips with oil if using, then drizzle over the stuffed dates.
  6. Drizzle with the caramel mixture and optionally top with more nuts and sea salt.
  7. Chill in the fridge for 5-10 minutes if preferred, then enjoy.
