Ingredients

  • 1 whole mature coconut (about 3½ - 4 cups grated coconut)
  • 2 cups all purpose flour, sifted
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • 1-2 teaspoons lime or orange zest
  • ½ teaspoon salt
  • 2 teaspoons nutmeg
  • 2-3 ounces butter, diced
  • 2 large eggs
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 400°F.
  2. Crack the coconut open and remove the flesh.
  3. Blend the coconut into a fine consistency.
  4. In a bowl, whisk together flour, sugars, baking powder, zest, nutmeg, and salt.
  5. Work in the butter until the mixture is crumbly.
  6. Stir in the grated coconut.
  7. In a separate bowl, whisk together the eggs and vanilla.
  8. Fold the wet ingredients into the dry ingredients until moistened.
  9. Shape the dough into 14 or more cookies and place them on a baking sheet.
  10. Bake for 12-15 minutes or until lightly browned.
  11. Let cool and serve.
