Coconut Drop Cookie

Instructions
- Preheat the oven to 400°F.
- Crack the coconut open and remove the flesh.
- Blend the coconut into a fine consistency.
- In a bowl, whisk together flour, sugars, baking powder, zest, nutmeg, and salt.
- Work in the butter until the mixture is crumbly.
- Stir in the grated coconut.
- In a separate bowl, whisk together the eggs and vanilla.
- Fold the wet ingredients into the dry ingredients until moistened.
- Shape the dough into 14 or more cookies and place them on a baking sheet.
- Bake for 12-15 minutes or until lightly browned.
- Let cool and serve.
