Ingredients

The Chicken

  • 4 large boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • ½ cup freshly grated parmesan cheese
  • to taste salt and pepper

The Bruschetta

  • ½ cup red onion, finely chopped
  • 5 pieces Roma tomatoes, seeded and finely chopped
  • 3 cloves garlic, finely minced
  • ½ cup fresh basil, chiffonade
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sea salt
  • to taste balsamic glaze

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the bruschetta by chopping all the veggies and placing them in a bowl.
  3. Season the chicken breasts with salt, pepper, and Italian seasoning, then transfer them to a baking sheet.
  4. Bake the chicken for about 25 minutes, until fully cooked.
  5. At the 20-minute mark, sprinkle Parmesan cheese on the chicken.
  6. Plate the chicken, add bruschetta on top, and drizzle with balsamic glaze.
