Instructions
- Preheat the oven to 375°F and prepare a mini muffin tin with cooking spray.
- In a food processor, combine rinsed black beans, maple syrup, melted coconut oil, coffee grounds, vanilla extract, and pitted dates. Process until smooth.
- Add ¼ cup of raspberries, flaxseed mixture, cocoa powder, almond meal, baking powder, and salt to the processor. Blend until smooth.
- Stir in chocolate chips and remaining raspberries using a spatula.
- Pour the batter into the prepared muffin tin.
- Bake for 25-30 minutes until the brownies are set in the middle.
- Let the brownies cool completely before removing them from the tin.
- Store in an airtight container for a couple of days, then transfer to the fridge.
