Easy Vegan Black Bean Brownies

Ingredients

  • 1 15oz can black beans, drained and rinsed
  • ½ cup almond butter (or any nut butter)
  • ¼ cup almond flour
  • ¼ cup cocoa powder
  • ½ cup maple syrup
  • 1 Tbsp melted coconut oil
  • 1 tsp vanilla
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a food processor, blend the black beans, nut butter, almond flour, cocoa powder, maple syrup, coconut oil, vanilla, baking soda, baking powder, and salt until smooth.
  3. 3. Stir in the chocolate chips without processing them.
  4. 4. Pour the batter into a greased 8x8 baking pan and add more chocolate chips on top if desired.
  5. 5. Bake for 20-22 minutes or until a toothpick comes out clean.
  6. 6. Store on the counter for 24 hours or in the refrigerator for up to 1 week.
